Spicy Chickpea, Courgette & Carrot Burgers
(Recipe borrowed from Ainsley Herriot’s Bbq Bible)
1 big clove of Garlic crushed
1 large Onion finely chopped
3 large Carrots grated
1 large Courgette grated
2 slices of nutty brown Bread whizzed into crumbs in processor
1 400gm tin Chickpeas rinsed & lightly processed still a bit chunky
2 heaped dessertspoons crunchy Peanut Butter
1 dessertspoon Patak’s or similar Korma Paste
Salt & pepper
Soften Garlic & Onion in a little Butter Olive Oil mix,then add Carrots cook for just long enough to soften a little, then add Courgettes mix & stir well cooking again briefly, then in a biggish bowl mix Breadcrumbs & Chickpeas add veg mix & stir in Korma Paste & Peanut Butter & season...take a good spoonful, roll in Whole-wheat or Spelt Flour pat flat & fry in either Sunflower or Coconut oil for approx 10 mins each side.
Delicious served in a toasted Pitta Bread with salad Mayo or Ketchup...Grandkids always add a slice of processed cheese too!
