'High House' Coalpot Creamy Coconut Chicken:
Dice 4-6 Chicken Breasts, marinade overnight in the BBQ Sauce, then lightly brown in pan, place in cookpot with the remaining BBQ Sauce, add;
1 tin chopped tomato's
1 can coconut milk
med pack Baby Corn, chopped into chunks
1 Sweet Potato, peeled and cubed
1 Red or Yellow Sweet Pepper, or both, de seeded and chopped
Freshly Ground Black Pepper, no salt (plenty in the soy sauce)!
Simmer gently for about 30-40 minutes, add more liquid if needed,
Chicken should be tender, and very delicious.
Serve with crusty bread or rice.
