Mr Oliver's Smoked Beetroot: Coalpot Style!

Borrowed from his superb book 'Jamie At Home' Get the Coalpot nicely heaped up with charcoal.. leave to get heated well through, while you get the Beet ready.

Serves 2:

Take 8 small Beetroot, trim tops down...but leave a tuft to hold it by! take a double layer of extra thick foil, large enough to make a well wrapped parcel...take a small bunch of fresh Rosemary,lay some on the foil, with the Beet on top, put the rest on top of them...wrap up well, securely tucking up the ends..stick a sharp knife through the foil several times, both top and bottom... this allows the lovely smoke to get through.

Take the grill off the Coalpot...and with a very long handled spoon, dig out a hole to fit your parcel.. you can put the coals on the grill very carefully! then flip it over to return them..as a cover for your Beetroot parcel...leave to cook for 30-40 mins until tender, allow to cool before peeling... discarding the charred skins, dress with extra virgin olive oil, red wine vinegar, sea salt, fresh black pepper and a small bunch of chopped flat parsley... absolutely delicious served with Jamie's Cottage Cheese dressing... but for that you have to buy the Book!!
